Biological farm

The plain of monumental olive groves, some of which are as much as 2500 years old, has recently been marked by a lively entrepreneurial spirit in the sector of organic and multifunctional agriculture, linked by the resources of the landscape and the history, culture and environment of the terrain. In recent years numerous examples of good practice in rural development of a collective nature and local initiatives linked to organic agriculture and to the protection of the agrarian landscape have been developed. Among these we wish to mention the ‘Oro del Parco’ (Gold of the Park) Project, set in motion by the community of organic farmers of Torre Guaceto; the ‘Oro dei Giganti’ (Giants’ gold) project, from the community of monumental olive groves of Apulia, the two  Slow Food presidia: the ‘fiaschetto’ tomato of Torre Guaceto and ‘regina’ tomato of Torre Canne, cultivated using organic methods, and safekeeping the genetic inheritance selected and passed on by generations of local farmers.

By the Trajan Way, near the River Morelli, in the Regional Park of the Coastal Dunes, the traditional rearing of eels and grey mullet with organic methods have been revived. There have also been interesting developments in organic beekeeping, brought about thanks to the collaboration between the young local workers and the Agrarian Institute of Ostuni.

Also in the area of Ostuni, a project has been set up for producing organic pasta from an old variety of durum wheat, called Senator Cappelli, cultivated using organic farming methods in the arable land of the Coastal Dunes Park. Besides these initiatives, there are many companies who have believed in and embarked upon organic agriculture, both in the olive growing/oil producing sector and in the production of vegetables and figs (Torre Canne), but also in the sector of dairy products. The agricultural companies and those who offer farmhouse holidays and the shops that form part of the Biotrail offer products obtained from the raw material found or grown in the area, and the services necessary so that products can be enjoyed by the visitors in the right way.

Produces fresh and dry pasta with the bran of Senator Cappelli’s variety of durum wheat, cultivated with organic methods in the arable fields of the farms that form part of the Coastal Dunes Regional Park. This product is the jewel in the crown of a certified process of pasta making of which the pasta making company Cardone is at the head.

Built in the 17th cent., it forms part of the historic residence of Apulia: for over two centuries it has belonged to the Guarini family, which indeed runs it. At the centre of the plain of age old olive groves, the farmhouse offers wine and food tasting tours for their guests. The lady of the house Maria Teresa personally takes care of the menu each day, which is put together using organic products from the same company and she also organises on request cooking courses.

A fortified manor farmhouse that goes back to the 11th-12th centuries, found among the age-old olive trees with two ancient underground olive-presses of roman and medieval origin and an olive-press on the surface from the 1800’s. The farm of the agricultural school ‘Pantanelli’ has 13 hectares of land and is situated in the plain of age-old olive trees just 2 kms from Ostuni. A monumental olive grove with trees of the ‘Ogliarola salentina’ variety, it forms part of the Natural Reserve of Torre Guaceto. In the past it belonged to the princes of the ‘Dentice di Frasso’, feudal lords of Carovigno and San Vito.
