Food tasting - along the trajan way

In this area in recent years many collective initiatives have been realised linked to the promotion of products obtained from organic agriculture: this ranges from the ‘Gold from the Park’ project, put into action by a community of organic farmers from Torre Guaceto, to the Community of monumental olive groves of Apulia, which involves numerous olive growers, the custodians of a millenarian landscape. The latter group is based at the ‘Pantanelli’ agrarian institute of Ostuni, and their aim is to promote the principles of organic agriculture and the protection of the agricultural landscape.

To these iniatives we can add the experience gained by setting up two ‘presidia’ of Slow Food; one for the ‘fiaschetto’ tomato of Torre Guaceto and the other for the ‘regina’ tomato of Torre Canne in the Coastal Dunes Park. These tomatoes are cultivated by saving the genetic heritage selected by generations of local farmers, paying particular attention to the savings in water resources.

In the same area, an old fish farming plant near the River Morelli, in the Coastal Dunes Park, has been restored by fishing families from the area to put back into operation the traditional rearing on an extensive scale of eels and grey mullet, returning to organic methods of fish farming. There has also been an interesting initiative concerning organic honey, obtained from the collaboration between the students and teachers of the ‘Pantanelli’ agricultural school and the Coastal Dunes Regional Park.
There is also being set up a production line in the sector of pasta making, bringing back into use an old variety of durum wheat called ‘Senator Cappelli’, cultivated using organic methods of agriculture in the extensive arable lands which are part of the Coastal Dunes Park. The aim is to obtain organic pasta made from well-known varieties of wheat. Besides these numerous initiatives there are the companies who have believed in and pursued organic agriculture both in the sector of cultivating olives and olive-oil and also in vegetable production and in dairy products. Thus we have a full basket of excellent products, which you can taste in some restaurants to be found along the bio-trail that represent sustainable agriculture which can defend both the landscape and biodiversity.
